Q's Arrowhead Chips (Fried Ngaku)

Time is flying.... 7 weeks to CNY 2019.
Today bought some ngaku (Arrow head). It sure is expensive this time round. Those early years is only RM3.80 per kg max. But today I'm paying RM6.80 per kg. ๐Ÿคจ just imagine how much it will cost for a tub. ๐Ÿค”๐Ÿ™„ if we were to buy from the seller.
I know it is a lot of work to be done.....
Ingredients and methods
Prepare a tub of salt water
Clean, wash and slice ngaku with a slicer
Soak the sliced nagku in the salt water till time to fry
Heatup wok and clean oil for frying
Drain nagku
Fry in small portion till golden brown or till no buble in oil
Remove nagku to a kitchen towel to drain access oil
Leave it to totally cool before store in an airtight container

Q's Steam Savoury Yam Cake


Ingredients
(A)
1 cup Rice Flour
2 tbsp Potato Flour
2 tbsp Wheat Flour
3 cups Water
½ tsp Salt

(B)
1 no  Yam ( approximately  500 gm-800 gm)   Cut cubes ½”
50 gm  Dried Shrimp
50 gm Minced Chicken / Beef
50 gm Dried Shitake Mushroom (Soak and cut cubes ½”)
2 cloves Garlic (Remove skin and finely chop)
1 tbsp Cooking Oil /Olive Oil

( C)
2 nos Red Chili (remove seed and chop)
½ cup Fried Shallots
1 stalk Spring Onion (cut 0.5 cm)

Methods
1. Get ready a steamer and fill the bottom layer with water. Let it boil.
2. Oil a 8”x 8” cake tin (either round or square. To your choice)
3. Mixed Ingredients (A) in a mixing bowl and strain the mixture.
4. Heat wok and pour in 1 tbsp cooking oil   / Olive Oil.
5. Stir fried the garlic in low fire till golden in color and then add in Ingredients (B).
6. Fried till fragrant and then remove it from fire.
7. Pour Ingredient (A) into the oil cake tin and then stir in the Ingredient (B).
8. Mix well the both ingredients
9. Once the water in the steamer is boiling, place the cake tin on the top layer of the steamer and steam for approximately 30 minutes or till the cake is cook.
10. Remove and let it cool.
11. Garnish it with Ingredients ( C) cut and serve with Chili Sauce

Raya Cookies 2

Completed my second batch of raya cookies.  Here we have Honey Cornflakes, Chocolate Nuts and Sarah's Semprit.  This year just manage to bake six type of cookies.  Maybe on raya eve, I bake either Cream Cracker Fruity or Carrot Walnut. 
This also depend on what time I'll be able to dismiss work.

Raya Cookies

Just complete my first batch of this year Raya Cookies and thery are Oats Raisin, Butter Chocolate Chips and Walnut.  The second batch I'm looking at, follow me in my next post.  See you soon.

Fruity Cinnamon Bun


Look like I'm busy this weekend.  Sigh! Am trying to get use to the oven given by my aunt.  In my earlier post, I've try out the Money Bread by Michael Smith.  But I find it a bit sweet. 



So this round I modify the recipe a bit by reducing the sugar.  It taste nice and not that sweet.  :) Cheers

Oat n Raisin Biscuit

We been spoilt by various type and brands of biscuit around us.  But did we stop and think are they good enough for us ie. too sweet, oily, salty or even are they using margarine or butter.  So instead of wasting too much time going through the
ingredient label on each packing, I made my own biscuit for my family during weekend and even share it with my friends.  Take it as a hobby and before you knew it, you will enjoy making it.  :) Cheers

Almond Cookie

My son's asking how to made a easy cookie as he and his buddies is joining a baking competition in school.  The theme is Raya Cookies and they have only a hour to complete.  So lesson for today is how to bake Almond Cookie.                                                          
I show him the recipe and he follow step-by step.  Well, at least he done it and now he understand why it is so fun in baking.   Good Luck to my son's and his buddies.  I can't wait to taste their cookie.  :)

Bread Pudding

I used to enjoy a nice Bread Pudding in one of the hotel in Kuala Lumpur in the 90's.  But now it is sad to say where have all the good food go to.

This is my third attempt and am please to say that it is almost there.
                             

Let's wait and see what my friend will say when she try it tomorrow.

Savoury Donut ("Harm Chim Peng")

Last week a friend's wife show us how to make donut which taste more like "Harm Chim Peng". This give me an idea to modify the ingredients further.  It's easy and fun to make.  Try it.

I love to eat it with a cup of  hot black coffee. Hmmm Yummy..............  How about you?

Ingredient
(A)
1 kg Flour (Blue Key)
1 tsp Dough Softener
(B)
75 ml Corn Oil (Daisy)
50 gm Butter

Mixture
75 gm Icing Sugar
11 gm Instant Yeast (1 sachet)
1 tbsp Fine Salt
500ml Water (luke warm)

1000 ml Cooking Oil for frying

Methods
1) Mix well mixture in a mixing bowl
2) Place ingredient (A) in a big mixing bowl and mix well
3) Add in ingredient (B) to (A)
4) Use the tips of your finger to mix both ingredient (A) and (B) till look like bread crumps
5) Pour the mixture in to the mixing bowl and knead the dough till it turns smooth and elastic. The dough should not be sticky
6) Cover the dough with tea towel. Leave it to rise for about an hor or untill double in bulk
7) Punch down the dough and knead on a table surface to form a log roll. Cut into into approximately 30 even pieces
8) Roll each pieces out flat or any shape you like.
9) Leave to rise for another 15 minutes
10) Heat up the work of oil
11) Deep fried till golden brown
12) Remove and drain the oil
13) Serve with honey or jam

Almond Puff


Almond Puff is one of my parents favour snack.  For the first time when I saw it in the bakery shop in Sogo, I was so happy and I bought it back with me to Penang.  We could not find it there.  Hmm wondering can I find it in Penang now?

It is fast and easy to make.   :)
