Q's Stir Fry Spicy Long Bean


Ingredients
200 gm Long bean clean and cut 1” long
2 tbsp Chilli paste
1 no Onion sliced
3 pc Crab Stick
1 no Egg
2 tbsp Cooking Oil 
Method
1.      Heat oil in a wok and add sliced onion fry till golden brown
2.      Stir in crab stick
3.      Add in the egg and then the chilli paste
4.      Stir till all mix well. Add in long bean
5.      Cook till vegetables are cooked but still crisp
6.      Add salt to taste
7.      Serve hot



Q's Prawn in Coconut Milk

This dish came into my dream.  It is one of my Mum's cooking and I really missed it.  I could not recall the actual name for this dish.  Anyway please do try it. You will not regret.



Ingredients
600gm Prawns large size Wash & Shell with tail on
2 tbsp Cooking oil

           (A) Sliced:
6 shallots
3 garlic
1 stalk Lemon Grass 

(B) Mix into a paste:
100ml Coconut cream
50 ml water
3 tsp tamarind paste
1/2 tsp Belacan granules
1no red chilli seedless cut wedge 
Seasoning to taste 

Method
1.          Heat wok with oil
2.      Add ingredients (a) fry until aromatic.
3.      Add prawns and stir till well mix.
4.      Add ingredients (b) keep string in low heat.
5.          Cook until prawns turn red

6.         Add seasoning and stir well

            7.     Dish out and serve hot

Week End Menu #3

Kailan Salted Fish
200 gm Kailan, 50 gm Salted Fish, 3 Cloves Garlic and 1 No Red Chilli.

Peanut Soup (Dessert)
200 gms Peanut skinless, 50 gm White fungus, 100 gms Sugar

Sautee Potato
300 gm Potato cut chunky cubes, 1 no Onion, 50 gm Butter

Braised Chicken
500 gm Chicken, 100 gm Mushroom soak, 50 gm Dry Bean Curd Stick, 30 gm Ginger slice, 3 clove Garlic, 3 tbsp Oyster Sauce, 2 tbsp Light Soya Sauce

Q's Ayam Lengkuas


Ayam Lengkuas anyone?

It taste sweet, sour, a little salty and spicy.  If you have not, then you should give it a try.  This is one dish you would not find in any restaurant.

 (A)  Bahan untuk kisar (Blend fine)
      400 gm      Bawang kecil (Shallot)
80 gm        Bawang Putih (Garlic)
100 gm      Halia (Ginger)
40 gm        Serai (Lemon Grass)
250 gm      Cili Merah (Red Chilli)
700 gm      Lengkuas bersih (Galangal)

(B)  Bahan untuk di gaul (Mixture)
350 ml       Kicap masin (Light Soya Sauce)
200 ml       Cuka (Rice Vinegar)
100 gm         Gula (Sugar)
2 tbsp           Garam (Salt) 

2 ekor        Ayam (Chicken clean and cut 16 pcs)

Methods: -
1)      Mixture together items A & B in a big maxing bowl.
2)      Marinate the chicken for minimum 2 hours.
3)      Using a big wok pour in the marinated chicken.
4)      Cook slowly in the small fire until the chicken is cook and dry.

Butter Cheese Muffin

Normally, I'll use the prepack mixture from one of the bakery shop for my cheese cake.  Since I have a block of cream cheese, I try mixing the using the basic butter cake mixture and add in the cream cheese. Well, it turn out fine.  The texture is smooth and fluffy.  :o)


                   Ingredients
                   250 gm                        Butter
                   100 gm                        Cream Cheese
                   100 ml                         Fresh milk
                   300 gm                        Blue key flour
                   150 gm                        Icing Sugar
                   5 no.                            Egg (Grad B)
                   1 tsp                            Baking powder

                   Method
                   1.      Mixed butter and icing sugar till fluffy.
             2.      Add in cream cheese and blend well.
             3.      Add egg one by one.
             4.      Heat-up oven at 180°C for 15 minutes
             5.      Add in flour
             6.      Mix in fresh milk if mixture is too thick.
             7.      Pour into individual muffin cup on a tray.
             8.      Bake at 180°C for 20 min. You can also test if it is done by
                    inserting a skewer into the cake. It's done when the stick
                    comes out clean.

Weekend Menu #2

Fruity weekend. I let the picture paint the words.

A friend of my brought a famous Lychee Cake from one of the outlets in Klang Valley.  I forgotten the outlet name.  It taste okay lah but a bit sweet and the sponge is soggy.

Applying the basic methods I did it. My very first Lychee Cake and I'll let this friend of my be the judge.  With the same idea, my next cake will be Manggo, Strawberry or any fruits.

Week End Menu

I'm always looking forward to weekends. Spending time with my family and most of all turning them into my very own taster.  Here are simply menu that I have try out and would like to share with all of you.

Tandoori Chicken and Bread Naan.  Ingredient - 1.8 kg Chicken (cut butterfly, wash and dry), 1 cup of plain yogurt, 1 pkt of Ibrahim Tandoori paste, salt to taste.  Marinate the chicken and leave it over night. (I try by leaving it sit for half a day but the taste of the tandoori did not penetrate into the whole chicken) Heat-up the oven at 200°C for 10 min then grill the marinated chicken for 30 mins or till chicken cook.



 
Cincaru Sambal. Ingredient - 4 nos of Cincaru fish, blend 100gm Dry Chilli, 50gm Shallots, and 6 cloves Garlic, 1 tbs Tumerine paste, salt/sugar to taste and finely slice one tumeric leaf.


 
Grilled Eggplant. Ingredient - 3 nos  Eggplant clean and cut half. Grilled eggplant in the oven or with non stick pan. (No oil is needed). This is nice to go with Tauchu Sauce. You need 2 tbs minced tauchu, 5 nos of chilli padi/burung cut fine, 4 nos of limau kasturi for the juice and salt/sugar to taste.

Chicken Rice & Bread Pudding

Greetings.  Would you like to try my Chicken Rice and Bread Pudding?




Ingredient for Grill Chicken : 1.8 kg Chicken(open like butterfly) season with McConnick seasoning. Grill in 180 degree Celsius for 40 min or till chicken is cook. As for the sauce blend 100 gm Red Chilli, 8 cloves Garlic, 50 gm Young Ginger and salt, sugar and rice vinegar to taste.


Ingredient for Bread Pudding, 3/4 small loaf of Bread, 100gm Mixed Fruits(Silver Bird), 100gm Almond Strip/Slice, 100gm Butter,  Mixed 5 nos Egg(grade A), 50gm Icing Sugar, 50gm Brown Sugar, 750ml Low Fat Milk. This measurement is for cake tin size 8" x 8". Bake in 180 degree celcuis for 20 min or till cook.

Lunch for In-Laws on 18/09/11

Feel so bad for not able to go back kampung for Raya. Instaed my parents in-law came for a visit yesterday.  They did not stay this time.  It is a very short notice and I'm not able to bake her favourite cake ie. Sugarless Fruits Cake.

For Lunch we are having Nasi Minyak with Mutton Curry, Pajeri Terung, Prawn Petai Sambal and Rendang Chicken without coconut milk.




Mutton curry from one of the mamak shop near Cheras Perdana.  The gravy is very nice and the mutton is tender.













Pajeri Terung from an eating outlet in Giant Connaught.The gravy is thick and the brinjal is grilled to prefection. She has taught me how to cook it but you know lah with all ingredient is like a pinch of this and that, a scoop of this and so on. Anyway at time is best to get it from the cook.



Sambal Prawn Petai.  Ingredients are 800gm Prawn (Shell off but tail on), 100gm Petai, 1 no Tomato (cut 6 wedges) and for the gravy blend 8 cloves Shallots & 3 cloves Gralic, 5tbsp Chilli Boh, 3 tbsp Tomato Ketchup, 1tsp Tamarin Paste, Salt & Sugar to taste.

As for Rendang Chicken, I use back the same recipe from my earlier post which is Beef Rendang without Coconut Milk.










All goes well and ends well.  Bon Appetite..........

Q's Mee Bandung

It's just a Mee Bandung.  But there are lots of version depending on the cooks.  I'm not aware of the origin of this dish.  I've try many stalls and restaurants around town and all taste difference from one another.

So this is my very own version of Mee Bandung.


I use 300gm chicken fillets, 200gm squid, 200gm prawn (L), 6 eggs, 1no carrot, 100gm round cabbage, 100gm sawi and 3 pkts of yellow mee.  For the gravy I use (blend all together) 50gm shallots, 4 cloves garlic, 100gm chilli boh, 200gm tomato puree, 50gm ground nuts, 50gm dry shrimps, 2 ltr water, salt and sugar to taste.

2011 Raya Open House

It's Raya Open House again and is time for get together, meet-up with old friends, food, drinks and etc.  We just had our open house last night and it is trilling.  We did not set-up canopy and are praying and hopping that it will not rain during the event.  Sigh............ it rain the whole morning and stop in the afternoon and started again in the night.  Lucky for us is that when it start to rain most of our guest already left leaving behind are only our close friend and neighbour.

The spread for this Raya is a simply menu.


The guests start to arrive as early as 7.20pm and by that time my husband and I were not even ready yet.  We excuse ourselves and quickly get ready before more of our friends arrived. The event start well and ends well.  By the time we clear and hit the pillow is already 3 am in the morning.  As matter of fact, most of our event we hosted ends around this time.  


We do not expect anything in return from our friends.  But being Malaysian we always love to share. Thanks a lot for all this lovely gifts

Q's Beef Rendang without Coconut Milk


             Usually when mention rendang, we will always say oh my god so
             high the calories.  Well now we could enjoy rendang minus the
             high calories (omit the coconut milk) and it still taste nice. 
             Give it a try.

             Ingredients
            (A)
            1 kg     Beef cut cube (also suitable with Chicken or Prawn)
            4 tbsp  Meat Curry powder
            3 nos   Potato cut chunky cube
            2 pcs    Lemongrass (pound)
            2 tbsp   Thick soya sauce
            1 inch   Block brown sugar
            2 tbsp  Pounded Desiccated Coconut
            2 tbsp  Cooking Oil
            Salt and Sugar to taste 
(B) Blend
            8 nos    Shallot
            4 nos    Garlic
            15 nos  Dry Chili 
           (C)
            2 pcs      Cinnamon stick
            5 pcs      Cloves
            3 pcs      Star Anise
Method
            1.      Heat oil in a wok.
2.      Fry in ingredients (B) & (C) and stir fried until fragrant
3.      Add in beef and pounded desiccated coconut. Mixed well
4.      Add in 1 liter water and potato cook in low heat
            5.      Add in salt and sugar to taste
6.      Steamer until beef and potato is cook and the gravy is thick
7.      Serve hot

BBQ on 2nd day of Raya

It is 2nd day of raya thinking that I can do marketing. But I'm wrong.  The market look 90% empty.  All you can see is people selling clothes, pots & pans, a vegetable stall, a dairy stall and yu char kueh stall.  So there goes my plan. 
Don't know what to cook for the night, I stop by the dairy stall and get a few items for steamboat.  Then I bought some yu char kueh and nasi lemak.  Omg, the triangle packing nasi lemak that use to be RM1 is now selling at RM1.40 per packet.  What is happening.  Taking advantage of the festival session?

In the end the we did not have steamboat for dinner but BBQ as propose by my husband.  So off we go shopping for BBQ.  Can you imagine, have to go to three hypermarket just to get the items? 

The kids invited their friends to join us.  We have Chicken Wing season w Mc Conick seasoning, Lamb marinate with yohurt, Fish Fillet wrap w banana leaf, Chicken Sausage, Otak-otak and Burger.

The most enjoying event for the night is BBQ Marshmallow.  The kids love it.

2011 Raya @ Home

This year we did not manage to go back hometown so we end up "celebrate" raya at home.  If I'm not wrong this is is the first time my husband have to sacrifice his raya celebration with his parent.  Which is hard for him.  No words can describe his sadness.

We are not prepare for raya so I just whip-up two simple dish to go with Tomato Rice for dinner.


Ayam masak merah is very common in most of the malay house.  So I want to try a new version of this dish.  Here is what I use for 1 no. of Chicken cut 16 wash & grilled in oven (deep fried is too oily), 200 ml Tomato puree, 50 ml Chili boh,  6 cloves Shallots & 3 cloves Garlic (blend), 1 no. tomato cut cubes, 2 pcs Cinnamon stick, 2 pcs Star anise and sugar & salt to taste.


As for second dish, I cook Egg Kurma for a change.  For this we need 5 no. Egg boiled hard, 3 cloves Challot & 1 clove Garlic (blend, 1 no. Potato cut cube, 1 no. Onion cut wedges 6, a bit of each Cinnamon, Star anise & Clove, 2 tbsp Kurma powder, 1 tbsp Meat curry powder, 50 ml thick coconut milk, 1 ltr water and Sugar & Salt to taste.

Raya Cookies 2

Completed my second batch of raya cookies.  Here we have Honey Cornflakes, Chocolate Nuts and Sarah's Semprit.  This year just manage to bake six type of cookies.  Maybe on raya eve, I bake either Cream Cracker Fruity or Carrot Walnut. 
This also depend on what time I'll be able to dismiss work.

Save the Gate

I was telling my son about the Finance Office Makeover and it is fun to be able to work as a team.  That is how Save the Gate came-up.  Since we move in till now that is about 11 years, we have not paint the gate. 
We did think about changing to the auto gate but oh my god it is so expensive. Having no knowledge on what type of paint to buy, we just go to the nearest hardware shop asking the owner what paint is suitable of painting a gate.  We receive a funny look from the owner and he ask us whether we would like to have a expensive one or a lower range.  I does not know that paint can cost so much now a day.  We head home right after it and start on the task. It took us 4 hours to complete it.

Let me tell you it is a very tiring job and that is why people charge so high for their labour cost. But anyway, we did it and we are happy with the result.

When my husband saw it, all he can say "so free ah, nothing else to do?"  HA! he is only jealous that we could do it without his help.

Finance Office Makeover

Today the whole finance's team made a history by changing their profession from Mr/Ms Square to overnite painter.  We have talented people in finance who just want to lay low.  We manage to turn over the office with-in 3 hours.
You can see for yourself the before and after of the finance office.  After a tired day work, we were treated to a buka puasa dinner in Spices at Furama Bukit Bintang, Kuala Lumpur by our Finance Manager.  They serve a lovely home cook dishes.  I believe you should try it. The Buka Puasa promotion for every 3 paying pax the fourth pax eat free and the selling price is only RM63++ per pax.  Those that missed home cook food, should come and try the spread here.

Q's Prawn Rendang

Fancy for Prawn Rendang?  To prepare this you need 15 nos of Prawn (L), 8 cloves of Shallots, 3 cloves of Garlic, 3 tbsp Seafood Curry Powder (Adabi), 1 tbsp Meat Curry Powder (Adabi) 3 tbsp Kerisik and 1 ltr santan.

Chocolate Delights


Last week while browsing in a bakery shop in Shah Alam, I saw that they also sell ready made tart shell.   Life is so easy now a day.  I bought only a tray of 30 numbers.  I thought of cheese as the filling but in the end I choose mixed fruits and almond chocolate.  The tart shell taste nice.  My next filling will either be custard or cheese drurian. 


I use the balance of the melted chocolate for chocolate lolipop.  Not bad right.  Do you agreed?

Work of Lion (part 2)

27th July, 2011 marks the Soft Opening of Furama Bukit Bintang, Kuala Lumpur with Lions Dance in the morning,  Taxi Campaign in the afternoon and Cocktail in the evening.
Lions go round visiting offices and doing thier charm.
Lion lion what will come my way.  Sigh...... can't wait to see what lion will tell me this time.

Fruity Cinnamon Bun


Look like I'm busy this weekend.  Sigh! Am trying to get use to the oven given by my aunt.  In my earlier post, I've try out the Money Bread by Michael Smith.  But I find it a bit sweet. 



So this round I modify the recipe a bit by reducing the sugar.  It taste nice and not that sweet.  :) Cheers

Grape Muffin

Blanket by Sarah's n Gang

You must be wondering by one want to spend so much time hand sew a blanket which you can buy it off shelf. Well...... it is what people say "I did it out of love of sewing" and it took Sarah's n Gang about one & half years to finish it. 
My aunt from Penang use to sew it for me during her free time and it is quite a numbers of blanket she have sew for me.  Due to age is catching up with her, she's unable to do it now.  Since the kids and their maid don't mind trying their hand on it and wa lah here it is the blanket by Sarah's n Gang. So, Mummy what you think about this blanket.    :) Cheers
