Ingredients
- 1 fish head cut 4
- 5-6 tbsp oil
(1) Blend
- 3 tbsp seafood curry powder (Babas)
- 2 tbsp chilli paste
- 6 nos shallots
- 3 nos garlic
- 1/2 tsp cumin
- 1/2 tsp mustard seeds
- 1 onion, thinly sliced
- 1 stalk curry leaves
(2) Mixed and Strained
- 150g tamarind
- 1.5 litres water
- 1 no grated coconut and squeeze out for coconut milk
- 200 gm ladies fingers
- 200 gm brinjal halve and cut 4
- 2 tomatoes, quartered
- 2 tsp salt
- 1 tsp sugar
- 1 tsp seasoning
Method
1. Heat oil in an earthen pot and fry ingredients (1) until aromatic.
2. Stir in tamarind juice and bring to boil
3. Add fish head, ladies fingers and brinjal. Cook until fish and vegetables are cooked.
4. Add coconut milk, tomatoes and seasoning. Simmer for 30 seconds.
5. Dish out and serve immediately with plain white rice or can also eat with bread.
