Simple Dish #12

Don't know what to eat for dinner. Hmmm.............

Ha I'm sure my family have not try this rice.  The first and the last time I ate this rice is during one of our picnic in Pulau Pinang where my friend's mother cook 


for us this Dal Rice and eat it with Sambal Ikan Bilis.  It's a best meal we ever had.

So for dinner we are going to have is Dal Rice with Grill Chicken, Acar Buah and Vegetable Dalca.   I have kept a portion for my lunch tomorrow. Want to join me?

Bread Pudding

I used to enjoy a nice Bread Pudding in one of the hotel in Kuala Lumpur in the 90's.  But now it is sad to say where have all the good food go to.

This is my third attempt and am please to say that it is almost there.
                             

Let's wait and see what my friend will say when she try it tomorrow.

Carrot Cinnamon Cup Cake

For Carrot Cinnamon Cup Cake I use 300 gm All Purpose Flour, 200 gm Brown Sugar, 5 nos Egg Grade B, 150 gm Carrot, 180 ml Daisy Corn Oil, 0.5 tbsp Baking Powder and 0.5 tsp Cinnamon Powder.




Try it.  The texture is smooth, fluffy, can taste the cinnamon and also the caramel from brown sugar.

I'm happy with the product as it is not oily.

I made it for my kids to share it with their teachers during the Teacher's Day celebration.

Simple Dish #11

In Simple Dish #11 clockwise from top Stir Fried Cabbage w Dried Shrimp, Assam Pedas Sardine and Cekor Chicken or in Hokkien they name it Hon K.

During my childhood day, my mum used to cook Hon Bak and I enjoy eating it with

Bengali Bread.  Due to situation does not permit, I substitute pork with chicken and it still taste yummy.

Simple Dish #9

For dinner tonight we're having Assam Pedas Taucu Ketam, Terung Sambal Udang Kering and ABC Chicken Ball soup.

From now on you'll see more of my cooking is without coconut milk and less oil.  

I have a big size family members and we're trying hard to cut down mostly coconut milk, oil, deep frying, sugar and salt.

Q's Fish in Salted Vegetable Soup

Everyone like fish.  But difference type of cooking.  My friend's wife love fish in soup and she has her own way of preparing the dish.

I share this with her.  I use 800 gm Garoupa fillet, 200 gm Salted Vegetable, 2 nos Tomato, 3 nos Preserve Plum, 50 gm Ginger and 10gm Dried Chili.

It's nice to eat hot.

This round my son's friends requested for a surprise dish as their meal after group study.

So in Simple Dish #8 we have (from the top clockwise) is Asam Pedas Sardin, Mixed Vegetarian Dish and Black Pepper Chicken.

Fruity Praline

A chef friend once told me that making praline is so easy.  But I do not believe him until now and I love making it.  I can have a lot of choices ie. I can have Almond, Walnut, Mixed Fruit, Orange, Mocha and lot more.  What I have here is Fruity Praline.  Try it  :)

Savoury Donut ("Harm Chim Peng")

Last week a friend's wife show us how to make donut which taste more like "Harm Chim Peng". This give me an idea to modify the ingredients further.  It's easy and fun to make.  Try it.

I love to eat it with a cup of  hot black coffee. Hmmm Yummy..............  How about you?

Ingredient
(A)
1 kg Flour (Blue Key)
1 tsp Dough Softener
(B)
75 ml Corn Oil (Daisy)
50 gm Butter

Mixture
75 gm Icing Sugar
11 gm Instant Yeast (1 sachet)
1 tbsp Fine Salt
500ml Water (luke warm)

1000 ml Cooking Oil for frying

Methods
1) Mix well mixture in a mixing bowl
2) Place ingredient (A) in a big mixing bowl and mix well
3) Add in ingredient (B) to (A)
4) Use the tips of your finger to mix both ingredient (A) and (B) till look like bread crumps
5) Pour the mixture in to the mixing bowl and knead the dough till it turns smooth and elastic. The dough should not be sticky
6) Cover the dough with tea towel. Leave it to rise for about an hor or untill double in bulk
7) Punch down the dough and knead on a table surface to form a log roll. Cut into into approximately 30 even pieces
8) Roll each pieces out flat or any shape you like.
9) Leave to rise for another 15 minutes
10) Heat up the work of oil
11) Deep fried till golden brown
12) Remove and drain the oil
13) Serve with honey or jam
