Q's Spicy Kurma Chicken



Ingredients

(A)
1 no     Chicken cut 12 to 16 pcs
220 ml Coconut Milk 
600 ml Water
3 nos    Potato cut 6 pcs
2 tbsp  Cooking Oil
Salt and Sugar to taste

(B) Spices
75 gm Kurma powder
25 gm Meat curry powder

(C)
A bit of each - Cardamon, Cloves and Cinnamon
            2 nos Bombay onion cut 4 pcs

Method

1.      Heat oil in a wok. 
2.      Fry in ingredients (C) until fragrant
3.   Add in ingredients (B) and stir fried until fragrant
4.   Stir in coconut milk. 
5.      Add in chicken and potatoes. Mixed well
6.      Add in water and leave it to steamer
7.      Add in salt and sugar to taste
8.      Steamer until chicken is cook and the gravy is thick
9.      Serve hot

Q's Pajeri Nenas


Ingredient: -
1 no sweet fresh pineapple (cut half and cut 1/2" thick per slice)
3 no bombay onion & 3 clove garlic (blend)
1" ginger (blend)
30 gm meat curry powder
50 gm kerisik (coconut paste)
220 ml fresh coconut cream add with 680 ml water
2 tbsp cooking oil
Spice mix: cloves, cardamon, cumin, & cinnamon. A little of each to yourown liking.
20 gm gula melaka (palm sugar)
1 tsp salt

Methods:-
1. Heat oil in a pot
2. Fry onion, garlic, ginger & mixed spice until aromatic.
2. Stir in curry powder and 100 ml coconut milk. Bring it to boil.
3. Add in pineapples and stir well.
4. Pour in the balance of the coconut milk and cook until the pineapple softens.
5. Once pineapple soften, add the kerisik (coconut paste), gula melaka and salt. Stir until it dissolves.
6. Let it simmer until the curry thickens on medium heat.
7. Remove and serve with steamed rice.
Note:
You can also replace pineapple with brinjal.

Fried Fish w Black Bean Sauce

Tired with soya bean sauce, I try out the black bean sauce.  This we can find it in sauce section of food department store.

I'll try this for my chicken dish.  Lets see the outcome in the next posting.

Q's Taco

Anyone for Taco?

I use butterhead lettuce, green peas, minced chicken and for sauce I mix chop tomato, onion and chili sauce.

Monkey Bread (Spice Bun)















This bread/bun caught my attention and I manage to print the recipe from Michael Smith show Chef At Home 5.  Just follow as the recipe and you will not go wrong.  It taste real nice.  The next time I will reduce the sugar and increase the spice. 
If you like spice than you will enjoy this.

Monkey Bread

Ingredients:

For the bread:
4 tablespoons butter, melted
2 cups milk
1/4 cup brown sugar
1 tablespoon vanilla
1 tablespoon instant yeast
4 cups flour
2 teaspoons salt

For Rolling:
1 cup sugar
3 tablespoons cinnamon
1 stick butter (8 tablespoons, 4 ounces or 1/2 cup), melted
Method:

Preheat oven to 200°. Lightly oil a large bundt pan or other baking pan.

In the bowl of a stand-up mixer fitted with dough hook attachment, add the melted butter, milk, brown sugar, vanilla and yeast. Mix for a few minutes and then add the flour and salt. Mix until the dough comes together in a shiny mass, and pulls away from the sides of the bowl. Put the dough into a large oiled bowl, cover with a towel and place in the preheated warm oven to rise for 1 hour, or until doubled in size.

When the dough has risen, take it out of the oven and pour the melted butter into a small bowl. Put the sugar and cinnamon into a second bowl and whisk well to combine.

Punch down the dough to knock the air out of it and then form and roll small balls in your hand or on the counter. Dip them first in the melted butter and then roll in the cinnamon sugar and layer them into the bundt pan or other baking pan.

Put the pan into the oven to rise for a second time, for about 45 minutes, until the dough balls reach the top of the pan and double once again. Remove from the oven and increase the heat to 350°. Once hot, place the pan back into the oven and bake for 40 minutes.

Dish without name

It's a long time since I cook this.  I modify my mum's cooking. 

This dish is nice to eat with white bread and it is not that heavy.  Ingredient I use are onion, potato, chicken fillet, sausage, tomato and grean peas.

Healthy Breakfast #2

We start our morning with an hour exercise by walking round our taman which is as big as a football field.  It's refreshing.
For breakfast he had a portion of yogurt and a slice of papaya.

Healthy Breakfast


Having two big monster kids is a real BIG headache. Making them walk few rounds in the park is like taking a candy from a baby. But in the end my son did few rounds yesterday and early this morning. To reward him for his trying I prepare attached breakfast which I call it Healthy Breakfast.

This is just first step and more to come.  It is for they're own good.

Q's Chicken with Beancurd in Preserved Beancurd Sauce



Ingredients
500 gm Chicken Fillet (clean and cut cube)
2 pcs    Hard Beancurd (cut into 8)
2 cloves Garlic (clean and chopped fine)       
2 pcs    Preserved Beancurd
3 tbsp   Cooking oil for frying
200 ml Water

Method

1.      Heat wok with  3 tbsp cooking oil
2.      Fried hard bean curd till golden brown and remove
3.      Sautee garlic till aromatic
4.      Add in preserved beancurd and stir till mash
5.      Add in chicken fillet and mixed well
6.      Add in fried beancurd and water
7.      Steamer till chicken cook
8.      Remove and serve

Sweet Corn Pudding


Ingredients
100gm             Hoen Kwe Cake Flour (Yellow)
120 gm            Icing Sugar
2 gm                Fine Salt (1/2 tsp)
220 gm            Coconut Milk (mixed with 680 ml water)
            300 gm            Sweet cream corn


Method
1.Mix all ingredients in a pot
2.Cook mixture over medium heat until mixture becomes thick & well blend
3.Pour mixture into a mould & keep refrigerated until set
4.Cut into pieces according to your favourite shape.

Moist Cake for Morning Break

Cakes requested by my son's for his school SPBT Club meeting.

As I'm not sure which type to bake and he only request for is the cake must be moist.  Since this is the first time they going to taste the cake, I give them

Moist Chocolate Butter and Butter Cake.

As far as I know the Moist Butter Cake will be a standing order for his school SPBT Club meeting. I'm glad they like it.

Almond Puff


Almond Puff is one of my parents favour snack.  For the first time when I saw it in the bakery shop in Sogo, I was so happy and I bought it back with me to Penang.  We could not find it there.  Hmm wondering can I find it in Penang now?

Having fun @ Pak Long Nelayan


It is sad to leave behind a group of friends who enjoy each other company with jokes, laughter, food and bad/good time. 

But life has to go on like how the clock keep ticking.  

Thank you for all the support from all of you in good and bad times.  Sorry if any "kasar bahasa" during my time there. I really hope she will find some one with same chemistry as her for the good of the department.

Till we cross the same path again in near future.
