Q's Pulut Tai w Seri Kaya

Missed eating Pulut Tai w Seri Kaya?  Well, this is one of the nyonya dessert and it is easy seen at the market or eating outlet in Penang.  But here in Klang Valley (Sigh)...  Anyway here is the recipe for you to try your hand on.



It is easy and the end product is wah lah.  Cheers

Seri Kaya (Coconut Jam)
Ingredients- 400ml Coconut milk (it MUST be concentrated), 5nos Egg, 5nos Egg yolk and 400gm Sugar.
Methods - Mixed all the ingredients with mixer for about 30 minutes in medium speed.  Then pour all mixture in slow cooker and cook in high heat for 1 hour.  Stir every 15 minutes.  Then turn to low heat and let it cook for 3 hours.

Pulut Tai
Ingredients - 350gm Glutinous rice, 100ml Coconut milk(concentrated), 100ml Coconut milk(diluted), 1 tsp salt and 5pcs Pine screw leaf.
Methods -
1) Wash then soak glutinous rice for 3 hours.
2) Extract the juice from pine screw leaf.
3) Divide 1/3 of the glutinous rice portion and mix w the pine screw juice.
4) Let it set for 5 minutes.
5) Mix 2/3 of the glutinous rice in a stainless steel plate with 70ml diluted coconut milk and 1/3 of the glutinous rice with 30ml diluted coconut milk in a separate stainless steal plate. Steam for 15 minutes.
6) Remove both portion of glutinous rice. Combine 1/3 glutinous rice into the 2/3 and pour in 100ml concentrated coconut milk & salt. Mixed using stainless steal chopstick.
7) Place back into the steamer and steam for 10 minutes.
8) Wrap the inner part of the cake tin 6" x 6" with aluminum foil.
9) Pour in the cook glutinous rice.  Spread evenly and place on top with another piece of aluminium foil.
10) Press hard on the glutinous to compress it.
11) Leave it to cool before cut.
12) Serve with Seri Kaya(Coconut Jam)
