Q's Fried Kway Teow Penang Style


  
Ingredients
1.5 kg              Kway Teow (Flat Rice Noodle)
200 gm            Taugeh (Bean Sprout)
200 gm            Siew Pak Choy (Can replace w Kuchai)
300 gm            Prawn
100 gm            Fish Cake (Can replace w Crockle)
50 gm              Garlic
5 nos                Egg

Paste:-
100 gm            Blended Chili
5 tbsp              Dark Soya Sauce

5 tbsp              Cooking Oil

Method
1.      Wash and soak Taugeh.
2.      Cut Siew Pak Choy / Kuchai about 1” length and soak.
3.      Peel Prawn.
4.      Slice Fish Cake or poach and peel Cockle.
5.      Peel and Chop Garlic.
6.      Heat-up wok and pour in the oil.
7.      Stir fried Garlic till fragrant/golden brown.
8.      Add in Prawn and Fish Cake. Stir about 30 second.
9.     Add in Kway Teow and Paste. Stir and mixed all.
10.    Break eggs in a bowl. Pour into the wok.
11.   Add in Bean Sprout and mixed together with the rest.
12.   Portion individually and serve hot.
